How to Cook

Amaranth cooks to a porridge-like texture, similar to polenta.

Basic stovetop method:

  • Ratio: 1 cup amaranth to 2½–3 cups water or broth

  1. Rinse amaranth in a fine mesh strainer.

  2. Bring liquid to a boil.

  3. Add amaranth, reduce heat to low.

  4. Simmer uncovered for 18–25 minutes, stirring occasionally.

  5. Remove from heat and let sit 5 minutes to thicken.

Uses after cooking:

  • Sweet: add milk, fruit, or spices

  • Savoury: cook in broth and use in bowls, soups, or stews

Amaranth can also be dry-popped in small amounts and used as a crunchy topping.
