How to Cook
Amaranth cooks to a porridge-like texture, similar to polenta.
Basic stovetop method:

Ratio: 1 cup amaranth to 2½–3 cups water or broth

Rinse amaranth in a fine mesh strainer.

Bring liquid to a boil.

Add amaranth, reduce heat to low.

Simmer uncovered for 18–25 minutes, stirring occasionally.

Remove from heat and let sit 5 minutes to thicken.
Uses after cooking:

Sweet: add milk, fruit, or spices

Savoury: cook in broth and use in bowls, soups, or stews
Amaranth can also be dry-popped in small amounts and used as a crunchy topping.
