Emmer Farro (Triticum dicoccum) is an ancient variety of wheat, distinct from spelt (Triticum speltaand einkorn (Triticum monococcum).

In Italian cuisine, emmer farro is often used as a cooked whole grain, in risottos, salads or soups. It has a lovely chewy texture and a nutty flavor.
